Specialty coffee in Nicaragua is built around small farm cooperatives, supporting each other and helping to maintain high quality from seed to ship! And the producers in San Juan del Rio Coco is no different. These producers use traditional organic farming practices on small plots of land, where they cultivate coffee alongside shade trees, bananas, corn, and beans.

During the harvest, each producer engages in selective picking, focusing on harvesting only fully ripened cherries, which are then processed using the farm's micro-mill. The cherries undergo washing and floating to remove damaged and less dense coffee beans. The selected cherries are then de-pulped, fermented, washed, gently dried, and stored until they are ready for export.

Cupping Notes: Clean well balanced flavor, smooth medium body, sweet brown sugar aroma, sweet aftertaste and bright crisp acidity with apple, lemon, pear, peach and chocolate notes.
