On Sulawesi, the Indonesian island previously known as Celebes, "Kalossi" was the former Dutch name for the island. It predates "Toraja" as a name for this coffee. The producers in this region have many favorable conditions for growing coffee, such as volcanic soil and thick forests for shade that maintain the moisture needed by the coffee plants. Small family farms grow and process their own coffee cherries, using the wet-hulled method that leaves the beans exposed as they dry on patios. They are then collected and transported to a central dry mill for final preparation, sorting, and export.
Cupping Notes: Intense flavor with a smooth, creamy medium-to-full body. Sweet brown sugar and honey aromas introduce mild, crisp acidity complemented by notes of citrus, orange, nectarine, cherries, brown spice, and dark chocolate. Finishes with a clean, sweet, lingering aftertaste.
