Ramirez Estate Bio: In the Dominican Republic, the family-owned Ramirez Estate run by the third generation employs over 400 workers who live and work on the property and make nearly 300% higher wages than Fair Trade Standard. Before the Ramirez family purchased the land in the early 1990s, the land was impotent and bare––natural water springs had long since dried up and farmers had only been raising cattle.

Today, the Ramirez Estate is one of the most environmentally-progressive and socially-conscious proprietorships in the world because they recycle materials used during coffee bean processing. First, coffee cherry parts that would normally be thrown out are converted into natural gas through fermentation––in turn, this natural gas powers their facility. Next, the used water is also recycled, filtered, and returned to water systems. Lastly, cherry pulps are added to a compost pile where they’re used as fertilizer useful to nearby farms.

In addition to creating exceptional coffee, the Ramirez Estate also gives back to its community in countless ways. By building schools in rural areas, local children no longer have to walk nearly twenty miles a day, and after donating books and computers, students have more opportunities to learn. The Ramirez Estate also allows other farmers in the Dominican Republic to use their processing plant to assist in coffee export.

The pictures seen on our website are part of our personal experience touring the estate and meeting the Ramirez family––they are humble, honest, and produce some of the highest-scoring coffees we carry.

Honey Process: This coffee bean is red honey-processed and grown in the Dominican Republic’s Jarabacoa region at 1,400 meters above sea level––its variety is caturra. As a honey-processed bean, the skins of the fruit are removed, but the pulp, or mucilage, remains on the bean during fermentation––this leaves a sticky-sweet sensation and fruity notes. The longer the mucilage remains on the bean, the longer the fermentation––thus the darker the honey process and the sweeter the cup.

Cupping notes: With milky notes of vanilla, and a nutty aftertaste, with heavy strawberry aromas that carry over into a stone fruit flavor. Smooth and balanced sweetness. This low acid coffee is smooth and will impress any island coffee lovers out there.

Roasted to FC. Beans finished with a reddish color (my imagination?). Nice smooth aroma, which also results in a pleasant fruity taste, which appeals to my palate. I use a little less water (for my Americano) than I do for most, as it isn't as bold as I'd like the normal way. A great coffee.

Will take a City to Full City roast. Pronounced sweet honey, milk chocolate and mocha notes, more than strawberry and blueberry. Low acidity, smooth and delicious. A real pleasure!

embodies the stereotype of Latin American coffee and tastes smooth and chocolaty the darker you roast it. a medium roast may prove to disappoint for flavor, so just keep roasting!

This is my favorite bean so far. Very smooth and balanced with a sweet taste. I roast just past first crack which is best for me. I've been roasting for 15 years and this is the best bean I've come across

This coffee was great! Roasted past first crack and resulted in a very smooth cup with fruit undertones and no acidity. Since I use the Gene Cafe to roast, it is usually very hard for me to hear 1st and 2nd cracks but this coffee had a very distinct and loud first crack. Although I did find a rock in the coffee and I am glad I found it before I put it through my grinder! This is the only reason why I left a 4 star review.

Love this coffee. It has been the easiest to roast bean I have ordered. The smell is amazing and the taste is too. I am fairly new to home roasting, but if the dozen or so varieties I have used, this is hands down my favorite. My roasts have been 1-2 minutes past first crack and I find the fruit notes are strong and sweet.

Purchased after seeing the high reviews. It was good but not my favorite. Roasted, it semlled great. I learned that higher price doesn't equal higher taste. I will likely try again in case I missed.

Using my Hottop I roasted three different degrees. First drop was 397, lack of intense flavor. Then drop at 402 degrees, very pleasant aroma and flavor, last roast was 408. Not as good as second roast. Blend all three and what a pleasent supprise. But the roast at 402 was very pleasant. Flavor, balance and aroma was outstanding.

Here of late, this is without a doubt my fav bean. I have always been a CR fan, but have found latelt that they have been a bit inconsistent. I have purchased this bean 3 or 4 times in the last couple years, and maybe it’s just me, or I’ve gotten lucky with it, but it is the best bean for me. I’ve been home roasting 6-8 2.5# batches monthly for about 20 years now, and for the money, as of this time, this is my favorite for sure. Thanks CBC for the introduction!!!

It's growing on me. Pretty complex but balanced and slightly bright, even taken past second crack. This is probably not my go to coffee but an excellent change of pace. Most of the reviews mention various berries and I can agree although I am still not sure which berry it is. It's probably several. If this coffee had a season it might be Spring with newness in the air. I want to re-order it but have so many others to try. I am sure to get back to it. I believe this may not be for everyone but for some it could be the bee's knees.

I roasted some of this up on a Gene Cafe to a solid medium roast (just to the first hints of second crack). Preheated first, then I slowed down the heat for a little bit on browning (@375), but otherwise just let it go full blast until it was done. Used a cooling tray after. Maybe it's from living in Oregon, but I get the distinct flavor of marionberries when brewing it in my Aeropress. It's uncanny! It comes through in the unique aroma as well, which fills the room with notions of wildberry pies. The marionberry flavor comes up right from the start, but I did find it best to wait about a week before it fully developed. Other notes: vanilla, milk chocolate, strawberry, hazelnut. Mildly sweet and tangy, but very smooth. Overall a very Pacific Northwest "wilds" feeling experience, and I think I'll make it a regular offering to my customers.

This isn't my favorite stand-alone, but when it comes to aroma, it stands out a mile. I roasted about 10 different kinds of beans and let them sit for a few days. Then I noticed this wonderful fruity cherry smell coming from the bags, but I couldn't figure out which one it was so I placed them all over the house and let them sit another day. My nose led me straight to this one. Since the flavor is a bit too tart and fruity for a solo, I started mixing it with Brazil Cerrado which is deep and chocolatey and the combo is pretty darn satisfying. This is a really great one to give your blend that early morning aromatherapy oomph!

This is my first honey process to roast and I just love it. It has the sweetness I've been looking for in my espresso. It has a smooth bodied mouth feel with a milk chocolate taste. I roasted it medium on my SR800 at 430 degrees. So I recorded 5lbs!

Absolutely Divine! Our new must have... Tasting notes on our Medium roast revealed cheerful strawberry & citrus notes, followed by a rich wide bodied milk chocolate with cinnamon that pleasantly complimented by a tasty smoky caramel finish... what a wonderfully exotic experience it was.

Wonderfully delightful! Our new must have. Our medium roast presented exotic strawberry citrus introduction notes, followed by a wholesome full bodied milk chocolate cinnamon, and rounding into a pleasant and tasty smoky caramel finish. Just wow.

Second batch I've roasted. It is an excellent SA bean. Was comparing it this time with the Honduran natural. Both are outstanding....will keep trying to decide, but both are winners!

It's really difficult for me to narrow down my favorite coffee but this is definitely one of my top five. Roasted at full city, this has a full-bodied nuttiness with a creamy smoothness and just a hint of sweetness.

I normally don't review coffee but do read them all. This is one that I felt that I needed to say something about. I really like this one and will be purchasing it again. I roasted this a Med, just past first crack. I tried to develop this as much as I could with my SR800. Initially, I wasn't getting the tasting notes as described. It was a good coffee but not what I was expecting. I see now why people say to let the roasted beans sit for up to 2 weeks before grinding and tasting. I can never wait that long. I roasted a couple batches of different beans. Long story short... I brewed this today and WOW. It has been a little over a week and what a difference. I can taste the sugary notes. It is a little like adding a slight amount of sugar to your cup. It has been everything that I was hoping it would be. So, roast it and be patient. This is an excellent cup of coffee this morning.

I love this coffee - and the cupping notes above nailed it. First and second roasts as follows (Using HotTop @200g) where the second roast was much more to my liking but the first roast was approaching second crack and was still very good. I was looking for a new go-to bean for my home roasting gig. I roast 2.5#s at a time and prefer the honey processed beans. Tried three different new varieties….the Honduran, this, and Mexico. This Dominican and Honduran were tough to decide on the top one. I’ll call it even…but still have about a weeks worth of each to decide. Great flavor profile…rich and nice consistent roasting and I generally prefer just touching on that second crack. You can’t go wrong with this bean!

I use a popcorn air-popper, and it worked great for this coffee. The bean really stands up to a dark roast, expresses the oils without charring or smoking too much. It's also really good at the medium / medium-light level, so I'll get it again because it's so versatile. I made a blend with the Ethopia Kayon Mountain and that is a hit!

I spare everyone all of the nerdy bean talk and get right to the point. This coffee is refreshingly delicious. Roasted to a City level it is light, fresh, crisp, fruity with a balanced acidity and slightly buttery finish. It’s the perfect daily drinker and will wow the socks of your guests that usually get their coffee pre-ground from a can. The bean quality is good, free from major defects and uniform in size. It’s a great example of the Honey process and recommend it for your consideration.

Still somewhat new to roasting but not to enjoying great coffee. Tried many varieties this stands out. Doesn’t matter how it’s toasted always turns out great. I have many fans drinking this coffee. Aroma and taste like no other.

This coffee has a robust and complex flavor. It is deeply reminiscent of blueberries and chocolate. The coffee takes a couple of days after roasting (as usual) to get the full flavor and aroma, but once it is there it is irresistible. When I pulled it as an espresso (single origin, didn’t blend it) I really tasted some honey in the flavor. If anyone has been to Urth Cafe in Los Angeles, this reminds me of one of their espresso roasts. Great as well for a french press. I roasted to about 30 seconds after second crack or 455°F or so, but my machine is not pro. If you go lighter it will be very bright.

This bean is probably one of top 3 favorites I've ever roasted. I find roasting between first and second crack produces an amazingly complex cup. Super rich, chocolate and berry notes for sure, very smooth and fruity overall.

This coffee is great and it is my new daily drinker. I have tried a couple different roast o it but so far my fav is to take it to the beginning of second crack and it is done. This a smooth and full of flavor. If you haven't tried it you should give it a throw.

I’ve roasted this coffee dark, medium and light and for me I find the most blueberry vanilla flavors coming out in a medium roast. I really love this coffee, Ethiopian Yirgacheffe is a favorite of mine but this Dominican Republic competes with that rich profile you get from Yirgacheffe.
